The way I narrow down my niche is that I am only teaching English pronunciation. And not only that, I only teach English pronunciation to Japanese speakers. And one more thing. I only teach English pronunciation to Japanese speakers who are advanced English learners. Then, my market is so small and this is how I stand out and can charge higher.
